Chùm ruột chọn những trái to tròn, căn bóng làm mứt sẽ ngon. Đem chùm ruột làm sạch rồi cho vào ngăn đá cho đông cứng. Sau đó đem ra rã đông, vắt bớt nước chua, làm như vậy sẽ không bị nát. Trộn 700g đường và muối vào ướp cho đến khi đường tan hết.

Khi thấy nước đường trong nồi sôi thì mở nắp, đảo đều, lúc này không cần đậy vì nếu đậy sẽ làm trào đường ra. Nấu thêm một lúc thì thấy chuyển sang màu vàng hồng. Dùng đũa trộn đều, khi thấy chùm ruột dần đỏ thì tắt bếp, hơi nóng sẽ làm màu đỏ lên đậm, đỏ hơn.
Nếu muốn chùm ruột đỏ mọng thì không đợi nó lên màu đỏ rồi tắt bếp, nếu thế chùm ruột sẽ chuyển sang màu đen. Còn muốn vị chua ngọt có thể giảm đường, không nên để nước chua nhiều vì sẽ gây nhão.
